OK, this was DELICIOUS.

Two things:

I substituted pepper flakes for the cayenne, because I didn't have any.

I left out the mint.

Blend in a blender:
1 c garbanzo beans
2 Tbsp olive oil

Mix in bowl:
1/2 c gluten flour
1/2 c breadcrumbs
1/4 c veggie broth or water
2 cloves finely chopped/pressed/grated garlic
2 Tbsp soy sauce
1/2 tsp lemon zest (I just squirted in some lemon juice)
1/2 tsp thyme
1/2 tsp paprika
1/4 tsp sage (didn't have any, substituted chicken seasoning)

Add garbanzo mixture to bowl and stir together. Knead until strings of gluten form, shape into patties/nuggets and pan fry 6-7 minutes a side.

My mixture was on the wet side. I think my impatience in making breadcrumbs (that is, they were hardly DRY) contributed to this, but I'm not sure. I did add a little more gluten flour because I wasn't getting that sturdy gluteny-ness, but didn't want to add too much more.

It took a LONG time to cook them, too. I cooked them at real low for about 10 minutes a side and then turned them up a bit more and cooked them 10 minutes a side again. Maybe I was forming them too thick. Not sure. Anyway, they are REALLY tasty.

The Cake Recipe

Of the two I tried, Dan and I both agreed this one was better. The other one tastes all right, but has a lumpier, moister texture, whereas the one in the link above tasted lighter and cakier. I'll put a picture up later, not that it's that exciting.

My chili was delicious. Not quite as spicy hot as I had thought it would be but it still tasted really good and it was nice to have something different. For my own future reference, I did a cup and a half of black-eyed peas cooked in water with Cajun seasoning, salt, and whatever the stuff is in the one unlabelled bottle in Dan's spice rack that smelled good. Toward the end I added half cup tomato powder, more seasonings, one can stewed tomatoes, and at the last I sauteed green pepper, onion, and two grated carrots with the same seasonings and garlic powder and threw that into the pot. Ate it with rice. Yum.

OK, time to clean up the kitchen. I think I'll put some of the cake in the freezer. I seriously need to stop making desserts and putting them in the freezer because it's getting to where we have almost more desserts than healthy food stashed out there. *sigh* But frozen cake=nom.

I am currently mixing two scoops of mayonnaise, a large squirt of mustard, onion powder, salt, and pepper with about 3/4-1 cup of sauerkraut in a 9X9 pan and I'm going to mix in some slightly cooked diced potatoes with skins still on and bake it at 350 for about half an hour.

I am curious to see how this will turn out.

You might want to wait to try it until I find out how it does turn out. :-p

The husband is still hard at work. Sabbath starts in about an hour and a half, so I'm trying to get our dinner made so I can have the kitchen clean before sundown.
