Well, "A Tale of Two Cities" has been begun. I'm in the courtroom scene now, so Ronnie has made his entrance and I am happy.

Have it paused for the moment, however, while I prepare lunch: veggie patties. I'll take a picture and put it up there later.

They smell pretty eggy. I was NOT going to sit and try to measure two tablespoons of beaten egg (or six, since I tripled the recipe), so I just used 3 eggs. Oh well. Baby needs the protein.

We just had tuna patties last night for dinner, and leftovers for lunch today. Creepy!

The eggs you use -- are they a coating aid to keep the bread crumbs on? If so, I just dump 1-2 eggs sans yolk in a bowl and coat via a basting brush.

I think in this case the eggs are intended to hold the patties together. I am not completely convinced they were really necessary since most of the patties I make hold together just fine without.

The only patties I've made are the tuna patties, and the mixture is just tuna, "mayo", milk and flour. The flour and bit of moisture from the milk and "mayo" seem to hold them together. Never used egg for that purpose! (But again, I don't know how to make any other patty!)

What kind of veggies are in this one?

This particular patty has potato, summer squash, carrot, and onion (but I just used onion powder because I was too lazy to cut up an onion), along with cornmeal... this is the recipe: http://tastyplanner.com/recipes/11968-tasty-veggie-patties

Usually I don't really use a recipe and just throw stuff together - rice, beans, tomato sauce, leftovers, grated carrot... and this is the first time I've used egg. Gluten flour or even just regular white flour holds the stuff together pretty well with a little oil and water added. It's a much cheaper alternative to the Morningstar veggie burgers. Which I love. But, they are kind of a luxury item.
